The Best Chicken Wings in Hamilton (...the World?)


Hands down.  Listen, Save yourself some time, stop reading this and just go eat some.

With the number of pizza and wing places scattered across the city and when you consider that Hamilton is just down the highway from the birthplace of buffalo chicken wings, you'd think that there might be lots of contenders for best chicken wing in the city.  I am however going to take a risk here and just call it.   Work, an unpretentious (in fact...super friendly) hang-out on James Street North and its my hands down winner.  I don't even hesitate to say that you'd be hard pressed to find a better wing anywhere.



The wings are prepared Confit style which is to say loosely that they are brined, and cooked extremely slowly in fat before being cooled and stored in that fat for some time. Finally, they are flash fried and served with either a home-made bbq sauce or home-made buffalo hot sauce.  They don't cut the wings into sections before they are cooked which helps to keep them moist.

The wings without sauce are perfect - juicy and flavourful with a nice crunch on the outside.  Add the home made buffalo sauce or Asian influenced bbq sauce and you've reached a sublime level of wing perfection that needs to be tried.

An order of wings ($12) is quite filling, but if there are two of you and if you want to roll out of the place you can also order the ridiculously good nachos (we had a combo of spicy pork and kimchi on ours) and a side of avocado fries.  That's what we did, and I'm still smiling weeks later.
